The very fine bead (the tiny bubbles) is a result of extended maturation - only super premium sparklings are aged for such a long time.  A classic méthode traditionnelle sparkling with 2 years on lees has a lovely boulangerie and sweet roasted nut aromas while the soft creamy, mid-palate with floral and citrus hints leads to a smooth, tapering tail that is delightfully crisp and clean.
